THE GRANDE CHAMPAGNE RANGE COGNACS ARE CRAFTED 100% FROM THE FIRST GROWTH OF THE COGNAC REGION.
GRAPE VARIETY - Mainly Ugni Blanc.
WINEMAKING - Grapes are crushed and pressed (between Sep- tember and October). Selected yeasts will be used to begin fermentation, which will be controlled daily. Juices ferment without the addition of sulfur dioxide. The wine is kept upon its lees (necessary for the development of the Cognac bouquet). Distillation can start when the winemaking is completed until March 31st at the latest (AOP COGNAC rules).
DISTILLATION - The wine is transformed into Cognac by the time honoured process of double distillation, the Charente Method of double heating in the traditional pot still.
MATURING - In French oak barrels mainly from the Limousin forest.
AGE OF OUR COGNACS - All of our Grande Champagne Cognacs are meticulously crafted to form a blend consisting of a variety of different qualities. For sure, our strategy is to age our Cognacs much longer than the minimum required by the regulation, especially for the eau-de-vie from the grapes of the Grande Champagne region. Generally, these Cognacs require long ageing in casks to achieve full maturity.
TASTING COMMENTS - Amber with flashes of mahogany. Hints of peach, marmalade, orange peel. Notes of vanilla, ice cream, toffee, walnut and rancio. A creamy cognac to be sipped patiently for a unique experience...This cognac is a real chef-d’œuvre !
TASTING - To be enjoyed neat at 20°C to 25°C (70° to 80°F), start with the nose to discover all the power, finesse and subtlety of the Premier cru de Cognac. Before taking a comfortable sip to be rolled around slowly on the palate before swallowing.
